Flavorful Vegetable Dip Recipe
As Madison enters her senior year and Kennedy her junior, I’ve come to the hard realization that they are no longer little kids, but actually young adults. They can do things like bake cookies, run to pick up lunch and even fill up the cars with gas. In some ways it makes me sad. In others, I recognize that they can pull their own weight around the house. In addition to randomly discovering that the dishes have been washed or the garbage emptied, they’ve both taken an interest in being in the kitchen. Madison has enjoyed baking while Kennedy has memorized the recipe for the vegetable dip that my mom has made for as long as I can remember. It’s still served with a huge variety of fresh vegetables at pretty much every gathering, large or small.
With the recipe solidly lodged in her brain, she’s been maintaining a fresh batch in the fridge as long as we keep the ingredients in stock. It seems like a good trade-off to me. We constantly have dip to encourage us to snack on vegetables instead of gravitating toward chips. Kennedy’s so proud of this recipe that she consistently asks if she can share it or her friends ask her to make a batch for them. My answer is always that she has to ask her grandma because it isn’t my recipe to share. My mom said that she doesn’t even remember where SHE got it from, but thinks it came from my Aunt Cheri. I’ve explained before that my mom, dad and their siblings feel you should share secret recipes because it’s tragic when something so meaningful to our lives dies along with the people who knew it. They speak from experience and have spent decades trying to recreate a beloved recipe that someone refused to share. As a result, we had my mom’s blessing to share the veggie dip recipe so here it is!
Vegetable Dip Ingredients
1 cup Mayonnaise (preferably Hellmann’s / Best Foods)
1 cup Sour Cream
1 tsp-ish Beau Monde Seasoning
1 tsp-ish dried onions
1 tsp-ish dried dill
1 tsp-ish dried parsley
1 tsp-ish Accent (MSG)
Measure out one cup each of mayonnaise and sour cream and combine in a mixing bowl. Don’t stress if you end up a little over or a little under, it’s okay. Also don’t spend a boatload of time trying to get those stupid air bubbles out of the measuring cup. I’m sure I’m not the only person who loathes that part of measuring foods like peanut butter.
Next, add one teaspoon of each herb into the sour cream and mayonnaise base. If you have fresh herbs, feel free to use them instead, but don’t fret if you don’t. I grew up eating this with dried herbs and it managed to be so memorable that I brought the recipe into my adult life.
Use a whisk and blend it all up. Can you use a spoon? Sure. Why not. This recipe isn’t meant to be a stressor. Regardless of what you use to combined it, at least remember to scrape the sides of the bowl to get any of the flavorings that may have been stuck to the edges. Now you need to sample it to make sure it’s just right. Here’s a tip: it never is. You’ll want to add a dash more of pretty much all of the herbs. Extra Beau Monde seasoning is usually what I end up adding the most. Kennedy improves the flavor by increasing something different every time.
Aside from being super quick and easy to make, the awesome part of this vegetable dip recipe is that you can either serve it up right away or put it in a container in the fridge for a few days. When you’re preparing for a cookout or getting to feed a lot of people, this is one side that you can prepare whenever you have the time. And for reference, one batch fits perfectly in a Rubbermaid Brilliance container.
If you aren’t a fan of runny dips, then you’ll want to try this one. It’s thick and adheres nicely to whatever you dip in it. On the flip side, it isn’t so thick that it makes a chip, cracker or cucumber break while trying to dip. As a bonus, our friends who are Keto told us this aligns with their menu planning. I don’t personally observe a Keto diet, but I was thrilled that our friends not only could enjoy it, but loved it! It was just one more reason to love this recipe. We hope it creates great memories for you like it has for us!
